Freshie Salad

This salad is LOADED with antioxidants, Omega-3’s, and fresh flavor. The mint is crisp, keeping the salad light, while the grapes are juicy, creating a fresh pop of flavor.

 

I love this recipe for lunches on-the-go. The kale is hearty and stays strong instead of wilting with time. The crunchiness of the seeds add to the total texture, and don’t get too soggy, which is a major bonus in my go-to salads!

 

Serves 1

 

Ingredients:

1.5 cups Lacinato Kale, thinly sliced

1 Tbsp. Fresh Mint, thinly sliced

Juice of 1 small Lemon

1/2 Tbsp. Extra Virgin Olive Oil

1/3 cup Red Grapes, cut in half

2 Tbsp. Pumpkin Seeds

1 Tbsp. Hemp Seeds

Directions:

  1. Massage kale with lemon juice for 15 seconds.

  2. Add mint, and mix until well-combined.

  3. Top with grapes, seeds, and drizzled olive oil.
